Answer: Eat one egg per day

A new meta-study, published in the Journal of the American College of Nutrition (JACN)1, compared scientific studies between 1982 and 2015. Researchers analyzed over 300,000 subjects looking for connections between egg consumption and coronary heart disease (CHD) and strokes.
Researchers concluded that, while no connection was made between CHD and eggs, subjects eating one egg per day on average reduced their risk of stroke by 12%.
“Eggs are a relatively low-cost and nutrient-dense whole food that provides a valuable source of protein, essential fatty acids, antioxidants, choline, vitamins, and minerals.”
According to the paper, “The possible relationship between dietary cholesterol and cardiac outcomes has been scrutinized for decades. However, recent reviews of the literature have suggested that dietary cholesterol is not a nutrient of concern. Thus, we conducted a meta-analysis of egg intake (a significant contributor to dietary cholesterol) and risk of coronary heart disease (CHD) and stroke.”
